In a small saucepan, combine honey, soy sauce, minced garlic, grated ginger (if using), vinegar, sesame oil (if using), red pepper flakes, salt, and pepper.
Bring the mixture to a simmer over medium heat, stirring occasionally, until the sauce thickens slightly and becomes glossy, about 5-7 minutes.
