Pistachio Cookie

Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
Add the vanilla extract and a pinch of salt, and mix until well combined.
Gradually add the ground pistachios and flour to the butter mixture, mixing until a dough forms.
Shape the dough into small balls and place them on the prepared baking sheet, leaving space between each cookie.
Gently press a whole pistachio into the center of each cookie, if desired, for garnish.
Bake the cookies in the preheated oven for 10-12 minutes, or until lightly golden around the edges.
Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
