Chinese cashew chicken

In a small bowl, whisk together soy sauce, rice vinegar, hoisin sauce, and cornstarch. Set aside.
Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken pieces and cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the remaining tablespoon of vegetable oil. Add minced garlic and grated ginger, and cook for about 1 minute until fragrant.
Add bell pepper strips and snow peas to the skillet. Stir-fry for 2-3 minutes until vegetables are crisp-tender.
Return the cooked chicken to the skillet. Pour the sauce mixture over the chicken and vegetables. Stir well to coat everything evenly.
Cook for an additional 2-3 minutes, stirring occasionally, until the sauce has thickened slightly.
Stir in the toasted cashews and cook for another minute.
Serve hot over cooked rice, garnished with sliced green onions if desired.
