Cheese Potato & Smoked Sausage Casserole

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the sliced smoked sausage over medium heat for about 15 minutes, stirring frequently, until lightly browned. Remove from heat and set aside.
  3. Place the cooked and diced potatoes into a 2-quart casserole dish.
  4. In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until smooth and bubbly.
  5. Gradually add the milk, stirring constantly, until the mixture is smooth and thickened.
  6. Reduce heat to low. Stir in the salt, pepper, Velveeta cheese cubes, and shredded cheddar cheese. Continue stirring until cheeses are melted and the sauce is smooth.
  7. Pour the cheese sauce over the potatoes in the casserole dish. Add the cooked smoked sausage and gently stir to combine everything evenly.
  8. Sprinkle the top evenly with paprika.
  9. Bake uncovered in the preheated oven for 35-45 minutes or until bubbly and golden brown on top.
  10. Remove from the oven and let it sit for a few minutes before serving.
