Italian seasoning, 1 teaspoon
minced garlic, 2 tablespoons
1 tablespoon of parsley flakes
1/4 cup of grated Parmesan cheese, plus more to garnish if desired

Instructions:
Get the Oven Ready: Before you begin, make sure your oven is heated at 400 degrees Fahrenheit.
To get the traditional French fry form, slice the russet potatoes lengthwise into thin strips.
Put the potatoes in a big basin and toss with olive oil, chopped garlic, Italian seasoning, salt, and pepper to taste. Season to taste. Toss the fries well so they are covered all over.
Preheat a baking sheet and spread the fries out in a single layer. Put them in the oven and bake for 30 minutes, turning them over halfway through to make sure they cook evenly.
Halfway through baking, sprinkle half of the Parmesan cheese and parsley flakes over the fries. Carefully toss them and keep baking for 10–15 more minutes, or until they are as crisp as you want.
Hot fries, topped with extra Parmesan cheese for added cheesiness, are ready to be served.
