Buckwheat and Beef Pilaf

Rinse the buckwheat groats under cold water before cooking to remove any excess starch and prevent them from becoming too sticky.
Sear the beef in a hot skillet before adding it to the pilaf to enhance its flavor and texture.
Use a combination of spices such as cumin, paprika, and coriander for a fragrant and flavorful pilaf.
Cook the pilaf over low heat and resist the urge to stir too frequently to prevent the buckwheat from becoming mushy.
Let the pilaf rest for a few minutes before serving to allow the flavors to meld together.
Instructions:

Heat a tablespoon of olive oil or butter in a large skillet or Dutch oven over medium-high heat.
Add the diced beef to the skillet and cook until browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.
In the same skillet, add a bit more oil if needed, then add the chopped onion and garlic. Sauté until softened and fragrant, about 3-4 minutes.
Add the diced carrots and bell pepper to the skillet and cook for another 5 minutes, until slightly softened.
Return the browned beef to the skillet, along with any accumulated juices.
Stir in the buckwheat groats, ground cumin, paprika, ground coriander, salt, and pepper. Cook for 1-2 minutes, stirring constantly, until the buckwheat is lightly toasted and aromatic.
Pour in the beef or vegetable broth, stirring to combine. Bring the mixture to a boil, then reduce the heat to low and cover the skillet with a lid.
Simmer the pilaf for 15-20 minutes, or until the buckwheat is tender and the liquid is absorbed.
Once cooked, remove the skillet from the heat and let the pilaf rest, covered, for 5 minutes.
Fluff the pilaf with a fork and garnish with chopped parsley or cilantro before serving.
