Lemon and herb baked salmon with grilled vegetables

4 salmon fillets
2 tablespoons olive oil
2 cloves garlic, minced
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
1 teaspoon dried thyme
1 teaspoon dried rosemary
Salt and pepper to taste
Lemon slices for garnish
For the roasted vegetables:

1 lb (450g) mixed vegetables (such as carrots, bell peppers, zucchini, and cherry tomatoes), chopped
2 tablespoons olive oil
Salt and pepper to taste
1 teaspoon dried Italian herbs (optional)
Fresh parsley for garnish
